A person very special to me turned me on to this wonderful "tofu" mousse. Its awesome with everything!
Bittersweet Chocolate-Banana Mousse
-3/4 to 1cup semisweet chocolate chips
-1 12oz box silken tofu (soft)
-2 large ripe bananas
-1 teaspoon vanilla extract
-2 to 3 tablespoons light brown sugar
-1/4 teaspoon salt
-1 teaspoon raspberry vinegar
Melt the chocolate
Puree all the other ingredients together, gradually adding in all of the banana
Add chocolate to blender and puree until very smooth, chill, and enjoy!
